If a player is (for example) sitting in the tackle zones of two opponents who both have prehensile tail, is it then -2 to dodge or leap out of there?

Reading the skill from the rule book, I would say -2 if leaving 2 tails. However, the errata might cover this. I dunno, sorry.

I think it's just like anything else, such as tentacles, which reads: "Only one player may use the Tentacles skill, even if the player is in the tackle zone of several players who have this skill."

If anything, that serves to prove the opposite. With skills such as tentacles, and diving tackle, it says that only one player may use the skill. Prehensile tail has no such restriction.

Yuh, the fact that they didn't mention what they clearly stated for those other skills made me question it...

What about a player with prehensile tail and diving tackle? Do they stack?

considering foul appearance works by adding the number of disgusting creatures together i would assume tail does the same
