Recipe: Ropa Vieja Reboot
Fumbblers,

So here is a Cuban dish that I enjoy cooking and figured I would share. Note that for all purists, it is not a traditional version of the Cuban dish Ropa Vieja (which translates as old clothes).

Ingredients:

-Roughly 2 lbs of Flank Steak, cut into large sections about 3 inches across the grain (so a typical flank steak would be cut into three pieces).
-1 Green Pepper (roughly chopped)
-1 Large Yellow Onion (roughly chopped)
-2 Tablespoons of Cumin
-2 Tablespoons of Oregano
-2 Finely chopped Chipotle Peppers in adobo (love me some adobo)
-2 Tablespoons of minced garlic
-2 Tablespoons of tomato paste
-1 medium can (12 ozs roughly) of tomato sauce
-Roughly 2 cups of beef stock
-Honey (to taste after cooking)
-White Vinegar (to taste after cooking)

Directions:

1.) Take those sections of steak, and brown on all sides in a heavy dutch oven pot. Once browned, set aside.

2.) Replace oil used in the browning and add new oil, garlic, and tomato paste and cook for about 2 minutes.

3.) Add chopped onions and peppers, oregano, cumin, chipotle, and tomato sauce into pot. Add beef back in and then add the stock until the liquid is almost covering all the beef. Pop into a preheated oven at 325 (F).

4.) Now pop onto gamefinder. You should have time to play a game (about 1.5 hours). When done, pull out of oven and stir around. Beef is probably still together. Pop back into oven and go back on gamefinder. May I recommend playing a friendly dorf team? :D

5.) Now that between 2.5 and 3 hours have passed... pull out of oven again. You know the dish is done with the cooking when the meat starts to fall apart at first touch.

6.) Set aside meat and veggies into a side bowl and pop the dutch oven back on the stove top on medium high. Add about a tablespoon of honey and a few dashes of vinegar as the sauce reduces and thickens. Taste, taste, foul, taste, and taste!

7.) When the sauce is done (should be thick and taste badass), shred the beef and add back to pot with sauce. Serve on top of white rice with some chopped up cilantro. I usually serve with sliced avocado and tomato.

Sounds like an awesome recipe... but I thought Cubans used cilantro only on seafood..? Or is that Brazilian?..

Rated 6 for being about something we SHOULD do every day, and that is appreciate the food we eat.

Hence the 'reboot' part.

All Cuban dishes have black beans and rice (and that is a recipe that can follow).

Make sure it is Flank Steak. It's a very grainy and non-sexy type of meat (as opposed to the sexy type amirite shadow?). It shreds easy and isn't a premium piece of meat.

as for cilantor jeffro: not sure about the cubans, but at least central american mainlanders use cilantro on beef all the time (you even get cilantro to go ith your meat when you buy it at the butcher)
