Honestly, just shooting for random S skills and firing anyone who doesn't get Guard, Grab, Mighty Blow, or Stand Firm (or maybe Break Tackle or Juggernaut) seems to be the best strategy with rookie Norse linemen. Once they've got one of those, you can build them appropriately.

This might include saving for a stat, if you rolled Guard: a 70k Block/Guard Hobgoblin is a reward in itself, and would be a shame to mar with a bad random or an expensive chosen skill that wasn't awesome. By contrast, should you roll +AV on such a player, you're thrilled, and if you roll +AG/+ST, you take a chosen primary like Fend or Tackle and move on. If you rolled Grab, Stand Firm, or Mighty Blow, then you wanna be taking chosen primaries like Tackle.

Season length is an important factor to decide whether to just roll random G skills or, given enough matches, wait and roll random S skills.
If the Season lasts only 7 matches it's harder to get 6 SPPs on Linemen and could be better to be happy with random G skills (for example, if you have to face Elves or Amazons in the next match a couple of Tackle Linemen could be handy).
With longer Season rolling random S skills is of course better.
