One of the great treats of Jamaican cuisine, Curry Goat is more of a slow, braised dish. It relies on large pieces of goat meat still on the bone - which impart it's own flavour as well the lovely natural connective tissues which help enrich the final dish - cooked slowly in a mixture of the other ingredients.
The onions, chillies, scalions, and seasonings are blended with water then the meat is left to marinate in the mixture (overnight is best) before being cooked with the potatoes and carrots and just enough water to cover.
Of particular note are the Scotch Bonnet chillies, "the Jamaican Chilli," added in almost insane amounts and the fresh thyme, a herb not usually found in curries but adds a great earthy flavour.
As usual with Jamaican cuisine it is not for the faint of heart due to the heat but is well worth it!

Goes great on top of that traditional Jamaican side dish, peas and rice!
