Orcs are a good team to learn with.
They are quite strong at low tv.
I would suggest taking tackle on at least one blitzer.
A lineman with dp, and maybe kick would be helpful also.
Guard is a very strong choice for most players too.

If you want to foul a lot (which Orcs very often do, depending on the situation) then 14 is a reasonable number to shoot for. Another school of thought would be to keep the TV lower and shoot for 12 players but then you need to be more careful with the fouls. If you have 3 players sitting on the bench all game than your TV is going to be higher (so you will play against harder teams) and that extra is wasted - unless you get down a few players during the game.

Try to score with Black Orcs. 4+ with a reroll is supposed to work 75% of the time, so it's not as daft as it sounds. Skilled BoBs are a necessity (Block, MB/Tackle, Guard).
Blitzers pick up spp almost by themselves - Tackle, MB, Guard are the most popular normal rolls for them.
Gobbos and Throwers are a luxury.

Scoring with BoB's is a great idea and not so prone to failure as you may think, I site Bull centaurs as proof of dice defying as they pick-up time after time with the same chance as a BoB.

I'd recommend going out of your way to skill BOBs at lower TV. Just don't risk it when playing against Surehands or really fast teams. I didn't skill mine, or rather the blitzers skilled way too quickly, and now I get creamed quite often as I don't have the muscle to back up those blitzers.
Block (on BOBs), Guard, Mighty Blow, Tackle, Piling On
Dirty Player on a lineman
Maybe one Frenzy somewhere to keep your opponents thinking
Until you get to much higher TV, I think that's about it.
