Angeblich's Best Recipe for Frankfurt's Green Sauce

Ingredients

For the sauce (for 3-4 persons):
  1. each a handful of the following 7 herbs:
    1. chives
    2. parsley
    3. pimpinelle
    4. borage
    5. sorrel
    6. cress
    7. chervil
  2. 2-3 cups of sour cream
  3. 3-5 pickled cucumbers
  4. mustard, salt, pepper

Serve with:
  1. 1-2 hardboiled eggs per person
  2. 2 potatoes per person


Method
  1. Wash and dry (!) the herbs before grinding them. Traditionally they are cut, until very, very small. But to be honest, I don't really taste a difference. Important is, that the herbs are well enough cut that the sauce is green, not white with green sprinkles.
  2. Mix with sour cream, salt, pepper and mustard. You can grind this sauce again, if it is not green.
  3. Cut the pickled cucumbers to small dice (POW!) and mix em wit the sauce. Do not grind again! The sauce is right, when the sweet-sour taste of the cucumbers, the mustard and the herbs are in perfect balance.
  4. Serve with halfed or quatered hardboiled eggs and potatoes.


Variation
  1. Leave the potatoes out, cut the eggs into small dice like the cucumbers and mix all. Serve as a kind of salad or relish to a barbecue.

  3. There are many variations of this sauce, for example without cucumbers, with yoghurt, etc. But I like my recipe best!
