keep plugging away fella. undead can really rock and dont underestimate the zombies. i personally field a max of 3 ghouls and often i only field 2. i prefer to play the numbers game with undead and use zombies to foul or to hold up oposition playersby standing in tacklezones. zombies make great shields for your more precious players. if you field 4 ghouls at a time you can often be looking at a scenerio where youu have nothing left to play with and the game can be losst early on. perhaps the onnly time i would even think of using 4 ghouls would be vs weak elfs or vamps etc.
i will often bench 1 or 2 ghouls and use them mainly on offense or for when i get outbashed. i will then use ghouls for a bit of elfball ;-).
for me in defense i would feild 2 ghouls 2 wights 2 mummies and 5 zoms and even sometimes i would go up to 6 zoms with 1 ghoul. the numbers game imo is the best way to play all the dead teams

A lot depends on the opponent of course. I'm with Pigstar, usually only 2 ghouls at a time, unless you are playing elves. Zombies are great for man-marking and fouling. If they get hurt, who cares? Also you have to be careful with the ghouls, opponents generally will go after them hard.

4 ghouls are actually a lot to get rid of. Though the bashier undead teams have had success in the right hands, my 'fast' undead team is so far doing great in the win department despite losing almost a ghoul a game to death.
Don't confuse what you see a lot of with what works best.

I have just started playing with undead as well. My record isnt great and i have thrown away about 5 games stupidly now. Nowi have go the hang of them a bit more at a low TV they seem to be one of the best defensive sides about for a complete lock out. If you dont take any risks at all and just play a wall defence there is very little epople can about your 2 st5 pieces and your ghouls protecting the rear.

I like the idea of ghouls being able to attack on every side for defensive purposes, and fielding only 1 ghouls would defeat the purpose of my strip ballers, honestly i play my ghouls almost skaven/elf like blitz/push/stripball another one picks up ball and runs away, i find this works well if you can get them chasing your ghouls while having wights pick of straggling defenders.

I use mummies to control the LoS. I use zombies to take hits and tie-up opposing players. I use one wight as my damage dealer (MB/PO/tackle/dauntless/juggernaut/jump-up is optimal), the other wight is used as more of a free safety (tackle/pass block/guard). I never have more than two ghouls on my roster, but I min/max my undead, my ghouls are support players in my strategies... I take block > side step > diving tackle > tackle on normal skill-ups, I take guard on doubles and hopefully leader on one of them with a second double.
Generally, opponents are too busy trying to deal with your zombies and mummies to really out-number your wights and ghouls. This allows me to lie in wait and spring on any mistakes. Ghouls are important, but I use them as harassers, keeping the pressure on my opponent to spread his team out.
