I would like to know if in test mode there is a way to change the value of FF, assistant coach and cheerleader

not that I've seen, but I would double check here:

and in the FFB client you can see all the commands available by clicking the help button.

You could create your own ruleset and manage the team there, but while you can adjust almost anything else (player skills, gold, FF) you can't adjust coach, cheerleaders. However by giving gold you could buy them.
